Olivo Corso Restaurant: cuisine and art that delight you
El Cotillo, while keeping its charm as a fishing and familiar village, hides countless treasures everywhere; one of them, is its delicious cuisine. Olivo Corso restaurant is one of the finest examples of high quality both in the meals and in the atmosphere of the place, where every minor detail is set for you to enjoy an exceptional experience.
Standing behind the stove, in a modern open kitchen, is the owner of this food corner, Fred Grimaldi. His career in the restaurant business dates back to some time he can barely remember, when his parents had a family-run restaurant in his native Corsica. Before opening Olivo Corso, Fred had been working for 25 years in the Canarian kitchens, and his experience is well reflected in the menu of his restaurant, that shows his deep affection and respect for local products and culture.
The Restaurant
The appreciation he feels for the local culture and people is expressed not just in his cuisine. With its perfectly charming, peculiar and museum-like atmosphere, the restaurant itself is outstanding: a tipically-Canarian building, with stones and constructing material converted into decoration elements, and real works of art, most of them made of marine debris. The man behind the renovation of this place is Malage, a majorero artist who turns everything he touches into beauty.
The interior walls of Olivo Corso house some local artists’ works that change every so often, giving the restaurant its museum-like appearance.
Food
In such a nice place, in the centre of El Cotillo, there is only one thing left to do: enjoying a varied food offer, with dishes combining local products with that creative touch and very special presentation technique that Fred has. One of the restaurant’s peculiar things, that is not so common in Fuerteventura, is its rich selection of tapas made with great dedication. It comes as no surprise that in 2018 Olivo Corso won the contest “Tapas de La Oliva” with its Prensado de Cochinillo Negro Asado, a composition made with Canarian black pig roasted meat. Don’t miss out on it!
Caramelized octopus with roasted sweet potato purée, Squid from El Cotillo, Ratatouille in a basket… they are just some of the most appreciated dishes that you can nicely blend with a wide selection of the best wines from the Canaries and Spain mainland (you can enjoy them by the glass).
Olivo Corso is one of those restaurants that you will go back to over and over again for its food, its attentive staff, the exquisite taste in the decoration; plus, it is also good value for money.
