La Scarpetta da Mario, excellent Italian restaurant in Corralejo, opens large new premises with exquisite decoration which matches its exquisite gastronomy.
For over 10 years Mario, coming from Parma, has chosen a concept that we sometimes forget about: the main purpose of food is to nourish. So, his dishes, apart from having an excellent flavour, are fully elaborate dishes, avoiding preservatives and artificial flavouring.
Here we leave our experience, a menu deserving «fare la scarpetta!», that is, to scrape the food out of the dish.
Burrata (creamy buffalo mozzarella), served on farm rocket from Fuerteventura, majorero cherry-perita tomato, honey vinaigrette, balsamic vinegar, extra virgin olive oil and fresh basil.
Puff pastry stuffed with mushrooms sautéed with rosemary, garlic, cava wine, mixed with Scamorza, Ricotta and Parmesan cheese.
Orange shrimps: on a brandy prawn bisque and cava-wine, reduced with natural orange juice and flambé with Grand Marnier.
Majorero ravioli: fresh home-made pasta, stuffed with seasonal aubergine, roasted with soya, garlic in its skin, mixed with fresh goat cheese, Pecorino cheese and mint. It is garnished by a simple sauce made of cherry-perita tomato with a little garlic and basil.
Livornese Abae: majorero fish garnished with concassé tomato, olive oil, capers, Taggiasca olives (similar to the Spanish «arbequina»), garlic and cava-wine.
Passion fruit Bavarese with grated chocolate: a kind of panna cotta but with little cream and lots of passion fruit, which gives it the suitable citrus twist.
